Ingredients required:

  • Quinoa rice: 1 cup

Procedure:

  1. At first, you have to cook quinoa rice in a pressure cooker.
  2. Once it is fully cooked, transfer the contents in a large salad bowl.
  3. Stir it up with a fork to make sure the grains are separated from each other.
  4. Cut avocado into two halves, take 1 piece and then dice it into small cubes.
  5. Add it to the salad bowl filled with quinoa rice.
  6. Cut the grape tomatoes into small pieces and add them to the salad.

  1. To prepare the salad dressing, add olive oil, dijon mustard, lemon juice, red wine vinegar, dried oregano, garlic, black pepper, honey (optional), salt in a mason jar.
  2. Close the lid and shake it well to make sure that flavors get infused.
  3. Next up, add olive oil, chopped kale, and salt in a container, mix them together with your hands, repeat until the kale leaves become tender.
