  • Uncooked quinoa rice: 100 grams
  • Purified water: enough as per requirement
  • Kale leaves: 60 grams
  • Frozen green peas: 200 grams
  • Finely chopped fresh mint leaves: 10 grams
  • Extra virgin olive oil: 1 tablespoon
  • Roughly chopped walnuts: 50 grams
  • Lemon juice: juice of half a  lemon
  • Salt: quarter teaspoon
  • Freshly ground black pepper: as much as required
  • Agave nectar: 1 teaspoon
  • Glass jar: 1

Procedure:

  1. To prepare the dressing, add agave nectar, extra virgin olive oil, chia seeds,  lemon juice, salt and pepper in a glass jar.
  2. Close the lid and shake it well to make sure that everything gets mixed up.
  3. Now, strain the chia seeds.
  4. Add quinoa seeds in water and bring it to boil.
  5. Quinoa rice will become puffy once it is fully cooked.

  • Unsalted, softened  butter: 125 grams
  • Light muscovado sugar: 200g
  • Eggs: 2
  • Finely grated lemon zest: from 1 lemon
  • Lemon juice: from 1 lemon
  • Sifted icing sugar: 2 tablespoons
  • Greek yogurt: half a cup

Procedure:

  1. To prepare the icing, mix icing sugar, yogurt, and lemon juice together to form a creamy paste and keep it aside.
  2. Do not forget to preheat the oven at 180 degrees beforehand.
  3. Cover up the base and sides of the baking pan with a baking paper.
  4. Add chia seeds in milk and set it aside for a while to set.
  5. After that add baking powder, bicarb, salt flakes and flour in a container and mix it well.
  6. Take butter and sugar separately in another container and whip it up, once it turns pale crack open and add eggs one by one beating and whipping each one at a time to prepare the batter.
  7. Now, add lemon zest and chia seed mixture and again whip it well.
  8. Transfer the contents in the baking pan and let it bake for around 40 minutes.
  9. Take it out and let it cool down for a while.
  10. Then add the icing on top and sprinkle some lemon zest to finish off.
  11. Serve it fresh.
