The Classic Lemon Coriander Soup

Ingredients:

  • Lemon juice – 1 tablespoon
  • Coriander leaves (finely chopped) – 1/4th a cup
  • Cooking oil – 2 tablespoons
  • Garlic (finely chopped) – 2 teaspoons
  • Green chillies (finely chopped) – 1 teaspoon
  • Onions (finely chopped) – 1/4th cup
  • Cabbage (finely chopped) – 1/4th cup
  • Carrots (finely chopped) – 1/4th cup
  • Vegetable stock – 3 cups
  • Salt – 1 teaspoon (or more as per taste)
  • Cornflour syrup (2 teaspoons of flour mixed with 2 tablespoons of water)

How to:

  1. Take a non-stick wok or cooking vessel and add the oil to it, heat it up.
  2. Once the oil has been heated, add the garlic and the chillies. Sauté them in the hot oil for a few seconds. Do this step on medium flame so that the garlic does not get burnt.
  3. Once the garlic has turned light brown and the chillies have become tender, add in the onions and sauté on medium flame for about 2 minutes.
  4. Add the cabbage and carrots as well. Sauté these vegetables on a medium flame for 2 minutes.
  5. Once all the vegetables have been cooked and mixed with the oil and garlic, add in the vegetable stock along with the cornflour syrup and salt.
  6. Mix well for about a minute.
  7. Add in the lemon juice.
  8. Cook the soup for another 2-3 minutes on a medium flame and stir occasionally.
  9. Add the coriander leaves and mix well.
  10. Serve the lemon coriander soup hot.

Ingredients:

  • Lemon juice – 1 tablespoon
  • Coriander leaves – 2 tablespoons
  • Coriander stems – one bunch
  • Cooking oil – 2 tablespoons
  • Garlic (finely chopped) – 2 teaspoons
  • Ginger (finely chopped) – ½ teaspoon
  • Green chillies (finely chopped) – 1 teaspoon
  • Onions (finely chopped) – 1/4th cup
  • Spring onions (finely chopped) – 1/4th cup
  • Cabbage (finely chopped) – 1/4th cup
  • Carrots (finely chopped) – 1/4th cup
  • Vegetable stock – 4.5 cups
  • Black peppercorns – 7-8
  • Salt – 1 teaspoon (or more as per taste)
  • Gram flour – 2 tablespoons

How to:

  1. Heat the oil in a deep and non-stick pan.
  2. Add the garlic, ginger and onions to the heated oil and sauté well until these become translucent.
  3. Now add the gram flour and sauté well until the gram flour is also cooked and has turned slightly brown in colour.
  4. Add the vegetable stock with the rest of the vegetables. Include the coriander stems as well.
  5. Add the crushed peppercorns and bring the soup to a boil. Add in the coriander leaves.
  6. Continue to boil for 5-10 minutes.
  7. Strain the soup.
  8. Keep aside the cooked vegetables for some other use.
  9. Heat the strained soup and add the salt along with the lemon juice.
  10. Bring the soup to a boil once again.
  11. Use the fresh coriander leaves to the lemon coriander soup and serve hot.
