1. Golden Sweet Potato Soup With Kale Pesto – 

For Kale Pesto – 

What Would You Need? 

  • 1/2 bunch of kale
  • 1/2 cup of fresh basil or cilantro
  • 1/4 cup of toasted pine nuts
  • 1/3 cup of extra-virgin olive oil
  • Kosher salt
  • A pinch of crush red pepper flakes

How To Do It? 

  1. Take a blender and add all the said ingredients in it.
  2. Blend the ingredients until its mixed together.
  3. Taste the paste and add salt as you need.
  4. Keep it aside to use it later.
  5. You can use this kale pesto for up to 2 weeks if stored in a refrigerator.

What Would You Need? 

  • 1 tablespoon of extra virgin olive oil
  • 1 sweet onion (diced in cubes)
  • 2 cloves garlic (finely minced)
  • An inch of fresh ginger (finely grated)
  • 2 tablespoons of red curry paste
  • 4 cups of chicken bone broth or vegetable stock
  • 3 cups i.e 3 medium sweet potatoes peeled and diced into tiny pieces
  • 1 teaspoon of turmeric
  • 1/4 to 1/2 teaspoon of cayenne pepper
  • Kosher salt
  • Black pepper (freshly ground)
  • 1 can full-fat canned coconut milk i.e 14 ounces
  • Juice from 1 whole lemon
  • Arils from 1 whole pomegranate for serving

How To Do It? 

  1. Take all the ingredients individually in tiny bowls and keep them ready before turning on the flame.
  2. Take a pan and add olive oil in it. Heat the oil in the pot on medium to high flame.
  3. Once the oil starts simmering, add ginger, garlic, and onion in it and let it saute or 5 to 6 minutes.
  4. Once the onion turns translucent, stir the paste well and leave it for a minute or 2.
  5. After 2 minutes, add the chicken bone broth or vegetable stock (if you want your soup to be thinner, you can add more bone broth or vegetable stock in it) in the pan and then add cayenne pepper, turmeric and diced sweet potatoes in it.
  6. Stir the mixture well enough for the paste to stick together.
  7. Leave the pan on medium to high flame until the soup comes to a boil, & then reduce the heat to medium-low flame.
  8. You can check the sweet potatoes with a fork.
  9.  Carefully transfer the soup into the blender and blend it until it is smooth.
  10. You might have to do this a couple of time depending on the capacity of your blender. Alternately you can also use a hand blender and blend the soup in the pot itself.
  11. Once the soup is well blended, pour it back into the pan.
  12. Add 1 whole can of full-fat coconut milk and then season the soup with some black pepper and salt.
  13. Take the soup off the stove and add a little lemon juice over it.
  14. Ladle your sweet potato soup and add the kale pesto and pomegranate over it.
